About Viva La Mexicana
In 2010, UNESCO awarded traditional Mexican cuisine a World Heritage and Culture status. The story of Mexican gastronomy goes back approximately 10,000 years, when it is estimated that corn, aka maize, was domesticated to convert it into the cereal that afterwards became the basic ingredient in Mesoamerican cultures - including that of the Aztecs. The domestication of maize as a alimentary base took a long time as the nomadic people established themselves as farmers. Similar to wheat in Europe and rice in oriental Asia, it became a food simply without which meals could not exist. The ancient origin of Mexican gastronomy means there is a different presentation from that other culinary heritages. Mexican gastronomy has a great variety of traditional regional dishes and is rich in flavour, aroma and colour. We are not fusion, nor Tex-Mex, but a Mex-Mex restaurant.
